Easy Carolina Style Pork Barbecue

Happy Monday! I hope you had a fantastic weekend! Our camping trip was amazing and although it was just a short overnight trip, it was the perfect relaxing getaway that our family needed. If you’re ever near the Charlottesville, VA area, we highly recommend Heavenly Acres. Our tent was snuggled into a secluded spot in the woods, but the campsite also provided a hayride and ice cream social for those who wanted a little bit of community, as well. The couple who owns the land is really friendly, and we are already talking about going back. We really had a great trip!

We were both exhausted when we finally got home yesterday afternoon, so I wanted to make something quick an easy… that didn’t take a lot of work on my part. If you don’t have a crock pot, you need to get one because nothing beats cooking dinner and napping at the same time! Here’s what we ate…

Easy Carolina Style Pork Barbecue

What You’ll Need:

  • 2lbs pork (shoulder, tenderloin, etc)
  • 1 1/2 cups apple cider vinegar
  • 1 tbsp brown sugar
  • 1 tbsp salt
  • 1 1/2 tbsp hot sauce
  • 1 bottle of your favorite barbecue sauce

What You’ll Do:

  • Place your meat into your crock pot, and turn it onto the low setting
  • Add the vinegar, brown sugar, salt, and hot sauce
  • Stir, cover, and let cook for about 6 hours
  • Drain, shred the meat (it should fall apart easily using 2 forks)
  • Add the entire bottle of barbecue sauce, stir, and enjoy!

This was my first time actually making barbecue, and I kind of used several recipes to create this one. It turned out fantastic, and we ate much more than we should’ve! I hope you give this one a try… it’s definitely one of the easiest meals I’ve ever fixed!
